Mom’s Granola Bars

We’ve made these countless times! They are simple, quick, EASY, and offer a great source of protein and energy for everyone in the family. We make a batch or two at the beginning of the week to grab-and-go throughout our busy schedules. They are also a perfect travel snack!

  1. Blend / process 1 cup of dates until they make a paste. Put in bowl.
  2. Toast 1.5 cups of oats and 1 cup of almonds: diced/sliced/whole/however-you-like-them. Add to bowl.
  3. Add WHATEVER ELSE you like to the bowl. We usually do 1/3 or 1/4 cup quantities of hemp seeds, coconut, dark chocolate pieces, any dry ingredient that sounds yummy!
  4. In a pan, heat up ½ cup of honey or agave and ½ cup of peanut butter or almond butter until it is mixed. (Sometimes we also add a chocolate or caramel spread.) Pour into bowl.
  5. Mix all ingredients the best you can! Make sure the dates are spread out pretty evenly, they are like the granola bar glue.
  6. Line a deep square pan with parchment paper. Pour in mixture and flatten out. We use the bottom of a glass (sprayed with cooking oil to prevent sticking) to press mixture until its compressed in the pan.
  7. Put in freezer for 20 minutes or so.
  8. Dump them, cut them, eat them! We store ours in the fridge.

Once you get used to the quantities and process, you can literally substitute or add any ingredient you’d like. Dried fruit, chocolates, different nuts and butters, maple syrup, cinnamon, whatever. Just be sure that all the liquids are heated up and combined before pouring into the dry mix!
